Smoked Chicken and Mushroom

This simple recipe makes a great starter.


Chestnut mushrooms

Smoked chicken breasts

Webs lettuce

Fried (or grilled) bacon

For the raspberry vinaigrette dressing

2/3 cup of oil

1/4 cup of raspberry vinegar

1/4 cup of raspberry jam


To make the dressing, combine the jam and vinaigrette in a blender (or whisk in a bowl), then gradually add the oil until a thick and creamy dressing develops.

Fry mushrooms in butter until soft.

Slice the chicken.

Place both the chicken, bacon and the mushrooms onto the lettuce and pour on the vinaigrette.
