This is a simple and absolutely delicious way to enjoy fresh whole trout.
You can do this in the oven or on the barbecue, and when it’s cooked the newspaper will come away with the fish skin.
Fresh whole trout 10-12 oz in weight
4 sheets of tabloid newspaper
Salt (use garlic salt if you like)
Herbs ie. Lemon balm, chives or dill
Salt the cavity of the trout, then insert the herbs
Lay 1 or 2 trout side by side in the middle of the newspaper,
Tie into a parcel with the string.
Soak the parcel well in water. Then:
Place in the oven for 15 minutes at 190 degrees (Gas Mark 5)
Prepare the fish and soak the newspaper as before.
Place on a hot barbecue for 7-8 minutes for each side – the outside sheets of newspaper will char but not ignite.
The inside sheets stay wet therefore allowing the trout to steam.
Once cooked remove newspaper, skin of trout will come away with the newspaper.
Now your delicious fish is ready to serve
